Ingredients :
1 cup chickpeas, 1 cup sugar, 1/4 cup ghee, 2 cardamom pods
For garnish:
1 teaspoon ghee, 5-6 pistachios ( chopped), 10-12 raisins

First, wash the green peas and blend them to have a good puree. Then heat ghee in a pan and then add the peas puree and keep stirring. Cook on low heat for 7-8 minutes. 250 gm chicken mince, 2 tbsp vegetable oil, 2 tbsp fresh coriander leaves finely chopped, 4 green chilies finely chopped, 1 tsp ginger garlic paste, 1/2 tsp black pepper, half tsp red chili crushed, 1/2 tsp all spice powder, salt according to taste
Ingredients for Samosa Dough:
2 cups plain flour, 6 tbsp ghee, 1/2 tsp salt, and water as required
Method
First, make the samucha filling. Take a pan, heat oil, and cook the chicken mince for about 3 -4 minutes. Then add ginger garlic paste with the meat mince and cook as long as it spreads smell. Add salt, black pepper, allspice, and crushed red pepper and minimize the heat. Cook for 10-12 minutes. Add coriander leaves after removing from the heat, mix well and put asides to become cool.
In the meantime, prepare the samosa dough. Take a bowl and put flour, ghee, or oil and salt. Mix them well. Then mix water and prepare a hard dough. Rest the dough for 30-40 minutes.

Method
First, take a bowl and add maida, salt, cumin, and cooking oil together and mix them well. Make a hard dough by mixing the required water. Take a small dough, roll it out and prepare samucha Patti.
Now it is time to prepare the samucha filling. To make samucha filling, heat oil in a pan and add cumin, and coriander, and fry them well. Then add red chili, and turmeric powder and cook for 2 minutes. Add potatoes and cook as long as potatoes become soft. After then add green coriander, green chilies, and chaat masala and the filling is ready.

Toffee apple bread & butter pudding
Ingredients:
3 apples, juice 1/2 lemon, 4 tbsp sugar, 397g can caramel, 6 finger rolls, 3 eggs, 400ml full-fat milk, 200ml double cream, 1 tsp vanilla extract ice cream (to serve)
Method:
First, slice the apples into rings about as thick as a 50p piece. Then season and toss the apple slices with the lemon juice and 2 tbsp sugar. Next, sprinkle about 2 /3 of the caramel over the base of a large baking dish. Now, layer the rolls and apple rings in the dish in overlapping lines.
Spread leftover caramel here and there on the mixture. Meanwhile, take a jug and whisk the eggs, milk, cream, vanilla extract, and 1 tbsp sugar. Flow the mixture over the rolls and apples then wrap in cling film. Let them set for 30 mins or keep them in the fridge for the whole night.
Prepare the oven to 170C and bake for 45-50 mins as long as the top is golden and the custard has set. Serve with vanilla ice cream.

Take another non-stick pan and cook the beef over medium-high heat for3-4 mins. Now add the garlic puree and stirring often, until fragrant, 30 sec. Now add mild curry paste, peas, and 1/3 cup water.
Reduce heat to medium-low, stirring occasionally, until sauce thickens slightly, 5-6 min. Now, add cilantro, yogurt, and 1/4 tsp sugar. Finally, add rice, spinach, and half the crispy shallots to the pan with beef and cook for 1-2 min.

Ingredients
1 tbsp sunflower oil or usual oil, 1 onion (chopped), 450g chicken thigh (boneless, skinless), 165g korma paste, 2 garlic cloves (crushed), 500g sweet potato, 400g chopped tomato, 100g baby spinach.
Method
First, clean the chicken and cut it into bite-size pieces. Then peel the sweet potatoes and clean them. Cut them into small pieces.
Heat the oil in a pan and then add the onion to the pan. Fry the onion over low heat for about 5 mins. Then add the chicken pieces, increase the heat and fry them until they become brown.

For the roast cauliflower & squash base
1 cauliflower, ½ large squash (cut into cubes), 1 tbsp oil
Method
First, for the base prepare the oven to 180C/160C fan. Then, season the cauliflower and squash with oil and then spread them on an oven tray. Roast them for about 25 mins or as long as they become tender. You can also prepare the base earlier and store it in the refrigerator in an airtight container for up to a month.
Now, heat oil in a pan add the onion, and cook until the onions become soft and brown. Now add the spices and cook for 2 to 3 mins. Then add the lentils, coconut milk, and 200ml water and bring to a boil.
Cook the mixture for about 20 mins. After that add the roast veg and cook for a further 10 mins. Add a little water if necessary. Add the coriander. Mix well and remove from the simmer. Serve with rice and yogurt.
