Yummy Mutton Recipes to Try at Home
Daal Gosht
Ingredients
1/2 kg mutton pieces, 2 -3 bay leaves, 5-7 cloves, 1-2 cinnamon sticks, 2 onions, 2 small tomatoes, 2-3 dry mango leaves, 1 tsp red chilly powder, 2 tsp coriander powder, 1/2 tsp cumin powder, half tsp garam masala powder, 1 cup tuwar daal, 2 tbsp ginger garlic paste, 1 tsp turmeric powder, one cup channa daal, 200 gms bottle gourd, 1 tsp cumin seeds, 4-6 green chillies, 5-7 cloves of garlic, coriander leaves for garnishing, lemon wedges, salt, oil
Methods
First, cook both the pulses with the appropriate amount of water, salt, and 1/2 tsp turmeric powder and make 6-7 whistles. When the cooker is cold down, add bottle gourd pieces and salt and cook on low flame until almost done. Then, cook the mutton using the ingredients until it is almost done. Combine prepared mutton with the dal mixture and cook for 10-15 mins. Finally, garnish and serve with plain rice and lemon wedges.

Mutton Nihari
Ingredients
500 gms lamb leg pieces, 2 medium-sized finely chopped onions, 2 tsp red chilly powder, 1/4 tsp turmeric powder, salt to taste, 2 tbsp ginger garlic paste, 1 tsp coriander powder, 1 green chilly finely chopped, ghee and oil, 1 tbsp lemon juice, 2-3 tbsp nihari masala
Methods
First, cook the mutton in the pot for about 2 hours. Then, add the prepared flour mixture to nihari and stir continuously so that no lumps are formed. Add to the gravy the fried onion and cook for another 15 mins. Garnish and serve.
Shahi Mutton Korma
Ingredients
250 gms lamb meat, finely chopped ginger, 5 – 6 cloves of chopped garlic, 1 large sized or 2 onions finely chopped, 1 tbsp ginger garlic paste, 1/4 cup milk, 1/4 cup thick yoghurt, 1/2 cup fresh cream, 1 tsp garam masala, 1 tsp black pepper powder ( freshly crushed), 1 – 1 1/2 tsp coriander powder, 1 – 2 tsp red chili powder, 2 green chillies chopped, salt, Ghee/oil
Methods
First, marinate the meat with salt, coriander powder, red chilly powder, ginger garlic paste, yoghurt and the grounded paste of onion and almonds for 2 – 3 hours. After 3 hours, cook the marinated mutton with other ingredients for 30 minutes or until done. Garnish with garnishing ingredients and serve with rice or parathas.

Paya Curry/ Soup
Ingredients
4 Lamb Trotters, 1 tbsp red chilli powder, 4 onions, 2 bay leaves, 5-6 peppercorns, 4-5 cloves, 1 small stick of cinnamon, 1 – 2 star anise, 1/4 tsp turmeric powder, 3 tbsp ginger garlic, 1/2 cup flour for cleaning paya, salt, oil
Methods
First, clean the paya and boil with 2 -3 cups of water with salt and turmeric powder for 2 -3 minutes, drain and keep aside. Then, cook the paya with other ingredients for about 30-40 minutes. Now, fry 1 finely chopped onion to make it a golden brown colour add this to the paya curry. Add water if required and simmer for 15 minutes on low flame. Garnish and serve with tandoori roti/rice.
Mutton Pulao
Ingredients
2 and 1/2 cups basmati rice, 250 – 300 gms lamb mutton, 2 – 3 bay leaves, 3- 4 peppercorns, 3-4 cloves, 1 small piece of cinnamon, 1 tsp cumin seeds, 1-star anise, 3 tbsp ginger garlic, 3 medium-sized onions, 1/4 cup chana daal, 1/2 cup thick curd, 6-7 light green chillies, coriander leaves, Salt as per taste, Oil
Methods
First, clean rice and chana dal separately and soak them in clean water for about an hour. Meanwhile, cook mutton with the given ingredients until almost done. Then, prepare the dal and rice mixture. Assemble cooked mutton and pulao well and simmer on low flame for about 15 - 20 minutes. Finally, garnish and serve hot.

Mutton seekh kebabs
Ingredients
250 gms lamb mince( with fats), 1 onion chopped, 4- 5 green chillies, 2 tsp Red chilli powder, 1 tsp Roasted Cumin powder, 1 tsp garam masala powder, Coriander leaves 2 tbsp, 2 tsp ginger garlic paste, 1 tbsp butter, 2 tbsp clarified butter, 1 – 1 and 1/2 tsp Roasted and crushed whole coriander seeds, Salt, Coal, 1 tbsp seek kabab masala, 1-2 tbsp raw papaya paste
Methods
First, clean the lamb mince, mix together green chillies and blend well. Then, add other ingredients to the mutton mix. Heat coal on the gas until it becomes red, now place this coal on the mutton mixture and pour 1 tbsp clarified butter. Then, give the mince in the kebabs shape and cook the kebab in the oven. Garnish and serve hot.
Shami Kabab Burger
Ingredients
Mutton patties, Burger buns 2, 1 tomato, 1 onion, 4 tbsp mint,2 tbsp mayonnaise, 2 slices of cheese, 1 tsp pepper powder, 2 tbsp chilli sauce, 2 tbsp tomato sauce, 1 tbsp green chilli sauce, salt as per taste, few lettuce leaves
Methods
First, prepare the kebab. Cut each bun into two and roast in the oven. Apply red sauce mixture to the base of the bun. Then place lettuce leaves. Now top it with mayonnaise. Place the prepared kebab on it. Then apply mint and coriander chutney to the kebab. Top it up with onion and tomato slices. Repeat the procedure for the remaining burger and serve immediately.

Gurda kaleji masala/ Kidney liver Masala
Ingredients
liver 1/2 kg, kidneys 4 (cut into halves), 3 tbsp ginger garlic paste, a pinch of turmeric powder, 2 tsp red chilli powder, 2 -3 nos chopped green chilies, salt, oil
