Ingredients
1 cup jackfruit (chopped), 1 cup flour, ¼ cup sugar (granulated), 2 tablespoons brown sugar, ½ teaspoon baking powder, ½ teaspoon baking soda, ⅛ teaspoon salt, 1 teaspoon vanilla extract, ¼ cup butter, ¼ cup sour cream, ¼ cup milk, 1 egg, ¼ cup coconut (desiccated), 2 tablespoon coconut for garnishing.
Instructions
First, prepare the oven to 375F and line the muffin tin with 6 liners. Meanwhile, take a bowl and sieve flour, baking powder, baking soda, and salt. Next, add granulated sugar, brown sugar, and coconut. Mix everything nicely.
Take another bowl and whisk egg, sour cream, and vanilla extract. Add butter (melted) while the mixer is running and mix well. Then add the dry ingredients and mix at low speed as long as it is combined well. Mix jackfruit pieces using a rubber spatula. Pour the mixture into a muffin mold each with ⅔ full batter.
