Jackfruit Coconut Muffin Recipe
1 cup jackfruit (chopped), 1 cup flour, ¼ cup sugar (granulated), 2 tablespoons brown sugar, ½ teaspoon baking powder, ½ teaspoon baking soda, ⅛ teaspoon salt, 1 teaspoon vanilla extract, ¼ cup butter, ¼ cup sour cream, ¼ cup milk, 1 egg, ¼ cup coconut (desiccated), 2 tablespoon coconut for garnishing.
First, prepare the oven to 375F and line the muffin tin with 6 liners. Meanwhile, take a bowl and sieve flour, baking powder, baking soda, and salt. Next, add granulated sugar, brown sugar, and coconut. Mix everything nicely.
Take another bowl and whisk egg, sour cream, and vanilla extract. Add butter (melted) while the mixer is running and mix well. 1/2 jackfruit, 1/2 lemon juice, 2 cups of water, 2 ripe bananas, 2 tbsp sugar (extra)
