Instructions
First, make sure to dispatch the water completely from the curd and then rest for 5 hours. After that add the fresh cream, and the sugar powder and beat to make a creamy texture. Blend the frozen mango pieces along with ½ cup sugar and some water to make a smooth texture.

12 fresh lychees, peeled & seeded, 125g unsalted butter, 3/4 cup caster sugar, 2 eggs, lightly beaten, ⅓ cup milk, 1 1/2 cups self-raising flour, sifted, ¼ cup blueberries
Instructions
First, preheat the oven to 180°C. Line a cupcake tin with 12 cases. Cut the fresh lychees into small pieces. Set aside. Then cream the butter and sugar with an electric mixer for about 2-3 minutes to make them light, and fluffy.
