Ingredients

1 1/2 pounds grape or cherry tomatoes,1/4 cup olive oil, Kosher salt, 4 cloves garlic, sliced, 1 pound eggplant (cut into 1/2-inch dice), 2 tablespoons chili paste, Four 6-ounce skinless salmon filets, Fresh basil leaves, torn, for garnish, Freshly ground black pepper

Directions

First, preheat the oven to 450 degrees F. Bake tomatoes and garlic with olive oil and salt for 5 minutes. Then, put tomatoes and garlic aside and cook eggplant for about 20 minutes and mix with tomatoes.  After that, cook salmon over medium heat for 6- 10 minutes. Transfer salmon carefully to plates. Scoop tomato-eggplant compote alongside.

Chicken Marsala

This easy recipe will need you only 15 minutes for preparation and 30 minutes to cook only. It is a dish of golden pan-fried chicken cutlets and mushrooms in a rich Marsala wine. 

Ingredients

1-1/2 pounds boneless skinless chicken breasts, 3 tbsp flour, salt, black pepper, 1 tbsp olive oil, 3 tbsp butter, 1 (8-oz) package button mushrooms, 2 cloves garlic, 2/3 cup chicken broth, 2/3 cup dry Marsala wine, 2/3 cup cream

Directions

First, dush the chicken with flour, salt, and pepper, put it in a ziplock bag, and seal the bag tightly. Keep aside. Then heat the oil and 2 tbsp of the butter on medium heat. Fry the chicken until the chicken becomes golden. After that, melt the remaining tablespoon of butter in the pan, add other ingredients and cook for 3 to 4 minutes. Add the chicken back to the pan. Reduce the heat to low and simmer until the chicken is warmed through and served.

Ingredients

1 1/2 pounds skinless, boneless chicken breast, 2 tablespoons butter, 3 cloves garlic, 1/2 teaspoon dried oregano, 1/4 teaspoon ground thyme, 1/2 cup chicken broth, divided, 1/2 pound bacon, 1 tablespoon flour, 1/2 cup freshly grated Parmesan cheese, 1/4 cup whipping cream, 1/4 cup chopped sun-dried tomatoes, 1 pinch red pepper flakes, salt to taste

Directions

First, melt butter in a large pot and fry garlic, oregano, and thyme for 30 seconds. Then add the chicken and cook for 3 to 4 minutes. After that, add in 1/4 cup of chicken broth and bake for 15 minutes. When the chicken is cooked, transfer it onto a plate and keep warm. Make the pasta sauce with the given ingredients and mix together the sauce and pasta well. Top with chicken and bacon. Ready to serve!

Homemade Mushroom Tortellini 

You cannot but try this delicate, flavorful mushroom tortellini recipe at home as your cozy Valentine’s Day lunch or dinner!

Ingredients

5 ounces shiitake mushrooms, 5 ounces cremini mushrooms, 5 ounces oyster mushrooms,  2 1/2 tablespoons butter, 2 small shallots, 3 medium cloves garlic, 1 teaspoon fresh thyme leaves, 1 teaspoon Worcestershire sauce, 3/4 ounces grated Parmesan cheese,  1 recipe Classic fresh egg pasta dough, A few tablespoons olive oil or brown butter for serving

Directions

First, cut mushrooms into small pieces.  Then melt butter and cook mushrooms for 3 to 5 minutes. After that, add shallots, garlic, and thyme and season with salt and pepper. Continue cooking until the mixture is dry and Worcestershire sauce. Then, blend until smooth. Transfer to a plate and spread into a thin layer, put in the refrigerator to cool. Divide dough into four even sections and give them tortellini shape transferred to a zipper-lock freezer bag for up to 2 weeks at this point. Cook tortellini in salted boiling water for 4 minutes. Serve!

Hearty Vegetable Lasagna

Ingredients

Directions

Cook the noodles in a large boiling water pot for 10 minutes. Cook and stir green peppers, mushrooms, onion, and garlic in oil in a large saucepan. Blend pasta sauce and basil and bring to a boil. Mix ricotta, 2 cups mozzarella cheese, and eggs together. Repeat layering and top with the remaining 2 cups of mozzarella cheese. Bake barred for 40 minutes. Let remain 15 minutes before serving.
