Romantic Valentine's Day Dinner Recipes for Home Kitchens 

Kachchi Biryani Recipe

Ingredients

2 lb mutton, 1 teaspoon ginger paste, 2 teaspoon garlic paste, 3-4 dry red chili, 2-3 sticks of cinnamon, 4-5 green cardamom, 1 teaspoon cumin, ½ teaspoon cloves, ½ teaspoon mace, ⅛ teaspoon nutmeg, 6-8 allspice, 3 tablespoon yogurt, ¾ cup ghee, 5 medium potatoes, ½ cup onion (thinly sliced), 4 cups basmati rice, 6 cups water, ½ cup condensed milk, 2 tablespoon milk, a pinch of saffron, 10-12 alubokhara, 4 eggs, and salt (as per required).

Instructions

First, soak the saffron in the milk. Then, wash and clean the meat and mix some salt with the meat and keep aside for 15-20 minutes. Then wash the meat and drain. Now ground all the spice. Put the meat, yogurt, ground spice mix, garlic and ginger paste, and salt into the pot in which the biryani will be cooked. Marinate for at least 30 minutes or the whole night if possible. 

Now take a pan and add 3 tablespoon ghee and fry onion as long as fragrant and golden brown. Keep aside the fried onions. Now add the pieces of potatoes into the pan, add some salt, and fry as long as golden brown in color. 

Wash the rice and drain and boil 6 cups of water in a pot when the water is boiling, add the rice into the pan. Add salt also. Turn off the stove as soon as the bubble forms on the water. Then drain the rice from hot water. Put ghee into a pan and add the marinated meat.

Cook for 10 minutes and then add the fried potatoes, some fried onions, and the alubokhara, and layer the prepared rice. Now add the soaked saffron and the condensed milk also. Add hot water in a way so that water doesn’t go above the rice layer.

Finally, add the remaining fried onion and cook for 30 minutes minimizing the heat and covering the pot. Add boiled eggs and serve hot with chutney and kabab. 

Chicken Roast Recipe

Ingredients

4 chicken leg quarters, Chicken marinade for frying, 1/2 teaspoon salt, 1/4 cup oil. 

Marinade for roast

1 large onion pureed 2 teaspoons of fresh minced ginger, 1 teaspoon of fresh minced garlic, 1 and 1/2 teaspoons of salt, 2 tablespoons of plain natural yogurt, 1 tablespoon of tomato ketchup, 1/2 teaspoon of ground black pepper, 1/4 teaspoon of nutmeg, 1/4 teaspoon of mace, Whole spices 1 bay leaf, 2 green cardamoms, 2 cloves, 1 cinnamon stick, 2 tbsp poppy seed paste or cashews, and 1/2 cup of milk.

Other ingredients

1/4 cup oil for cooking, 1/2 teaspoon of garam masala, 1/2 cup of fried onions, 

Instructions

First, wash and dry the chicken leg pieces and prick the pieces all through using a fork. Take a bowl and add the chicken, the orange food color, and salt. Mix together and keep in rest for 5-10 minutes

To make the marinade:

Blend the onion to make a puree. Now mix well the onion puree, minced ginger, minced garlic, salt, ground black pepper, tomato ketchup, natural plain yogurt, nutmeg, mace, and whole spices in a bow and keep aside.

Frying the chicken leg pieces:

Now fry the chicken leg pieces on a medium flame for 4-5 minutes on each side and remove them from the pan as soon as they become light golden brown color. Add 1/4 cup of oil to the pan and add the marinade mix.

Cook for 5-6 minutes. Then add the fried chicken pieces. Mix carefully and then add 1/4 cup of hot water. Cook for 10 minutes. After 10 minutes add poppy seed paste, and milk, and cook for another 10 minutes. Finally, add the fried onions, a few green chilies, garam masala, and ghee and cook for 8-10 minutes on medium heat uncovering the pan. Serve hot with rice or polo. 

Beef Hari Kabab Recipe

Ingredients 

1 kg solid beef, 1 cup onion, ½ cup cooking oil, 1 tablespoon onion paste, 1 tablespoon garlic paste, 2 tablespoons green papaya paste, 1 tablespoon ginger paste, 1 tablespoon green chili (paste),  two tablespoon onion, 1 teaspoon turmeric powder, one teaspoon cumin powder, 20-25 pieces black pepper, 1 teaspoon sugar, one tablespoon salt, 4 green chilies,  1 teaspoon hot spice powder (cardamom, cinnamon, and cloves).

Instructions

First, cut the beef to make them thin pieces. Add green papaya paste and all other spices, except sugar and onion with the beef slices. 

Fry onions in a pan and add the brown onions and hot oil with the meat. Keep these meat slices marinated for 8-10 hrs. You can put it in the refrigerator in the summer season. 

When marination is done, cook all marinated beef over medium heat covering the pan with a lid as long as water comes out of the beef. Then add green chilies and onion slices. Take out hari kabab from the pan when the water dries out and serve it hot with fried or plain rice.

Fish Cutlets Recipe

Ingredients

For the fish:

Fish: 6 pieces ( as your choice), 1 small ginger, 2 Green chilies, 3 Garlic cloves, 3-4 Rawa fillets

For the base:

100 gms bread crumbs, 1 egg, 2 garlic cloves, 1 small ginger, 1 chili, a few leaves of mint, to taste salt, 1 tsp turmeric, 1 tsp red chili powder, 1 tsp saunf, 1 bread slice, 1 tsp oil, water (as required), 1/2 Lemon (juiced), 1 potato (mashed), boiled, 2 tbsp flour, oil (to pan fry), mint leaves ( for garnishing)

Instructions

First, take a pan and steam the fish in a strainer and then add ginger, green chili, and garlic and cover the pan.

Prepare the base:

Take a blender and put bread crumbs, egg, garlic, ginger, green chilies, fresh mint leaves, salt, turmeric powder, red chili powder, a slice of bread, oil, and juice of half lime and black pepper and blend them well. Add water if necessary.

Now add the steamed fish into the blender and grind again. Take the mixture into a bowl and add the boiled mashed potato. Mix everything properly and prepare cutlets with the mixture. Coat each cutlet in flour and keep it in the fridge for 10 minutes. Fry each cutlet on both sides and serve to garnish with mint leaves.

Chocolate Cake Recipe

Ingredients 

2 cups flour, 2 cups sugar, 3/4 cup cocoa powder, 2 teaspoons baking powder, 1 1/2 teaspoons baking soda, 1 teaspoon salt, 1 cup milk, 1/2 cup vegetable oil, 2 eggs, 2 teaspoons vanilla extract, and 1 cup boiling water.

Instructions 

First, prepare the oven to 350º F. and prepare the cake pans also by buttering. 

For the chocolate cake: 

Take a bowl and mix flour, sugar, cocoa, baking powder, baking soda, and salt Mix everything properly. Then add milk, vegetable oil, eggs, and vanilla to the flour mixture and combine together on medium speed as long as mixed through. Minimize the volume and add gently boiling water to the cake batter as long as mix well. 

Now bake the cake for 30-35 minutes or as long as a cake tester cake comes out clean if it is inserted in the middle of the cake. Remove from the oven and cook for 10 minutes. Garnish with chocolate buttercream frosting and serve.

Fruit Desserts Recipe

Ingredients

3/4 cup butter, 1 1/2 cups flour, 2 tablespoons sugar, 1 envelope whipped topping mix, 1 package cream cheese, 2 cups sugar, 1 can cherry pie filling

Instructions 

First, prepare the oven to 350 degrees Fahrenheit. Now, for the crust, combine the butter, flour, and sugar. Now put the crust into the bottom of a 9×13-inch baking dish and bake for 25 minutes. Keep aside. Then make the whipped cream following the package instructions. 

Take a bowl and mix together the softened cream cheese and sugar (powdered). Beat at medium speed as long as smooth. Then mix with the whipped cream and spread the mixture over the cooled crust. Finally, top the mixture with the cherry pie filling. Put in the refrigerator for at least 4 hours before serving.
