Chhuri Shutki Bhuna

Ingredients:

Chhuri Shutki 100 gm, garlic (chopped)- 2 tbsp, onion (chopped)- 1/4 cup, tomato (chopped)- 1/4 cup, green chili- 3-4 pieces, red chili powder- 1/2 ts, turmeric powder- 1/4 ts, cumin powder- 1/4 ts, coriander powder- 1/4 ts, oil- 3 Tbs, salt- 1/2 ts to or taste, and coriander leaf (chopped)- 1 Tbs. 

Procedures:

First, fry the dried fish for 5 minutes. Then boil the fried fish with water for 4 minutes. Use a strainer to drain the water. Then remove the bones from the fish. Next, put oil in a pan and fry the chopped garlic for 10-12 seconds. Then add the chopped onion and fry as long as the onion becomes soft and tender.

Add the tomato (chopped), green chili, red chili powder, turmeric powder, cumin powder, coriander powder, and salt. Cook as long as the oil starts to come out from the masala. Add the boiled fish and mix well. Pour some water and cook for 5-7 minutes. Finally, add the chopped coriander leaf and mix, and transfer to a dish. Serve with rice or khichuri.

Roasted Loitta Shutki Salad 

Ingredients

5-7 pieces of Loitta Shutki, 15-20 pcs green chili, ½ cup onion (chopped), ¼ cup coriander leaves (chopped), and salt (as required). 

Procedures:

You can use a charcoal BBQ grill if you have one. But if you don’t have one, you just place a net over your gas stove. Then put the dred fish over it. You need to put the heat on medium low. Burn both sides of the fish to make all parts crispy and well-cooked.

After charring, remove all burnt parts using a knife. Then cut or break the dried fish. 

Next, roast all green chilies and make a coarse paste by grinding. Mix together the chopped onion, coriander leaves, salt, and roasted dried fish pieces. Enjoy with hot rice.

Chepa Shutki Bhorta 

Ingredients

Chepa Shutki  6 pcs, garlic  1/2 cup (chopped), onion chopped  2 cups, green chili 6-8 pcs, mustard oil 1 tbsp, and salt (as required).

Procedures:

First, heat oil in a pan and fry the shutki for 4 minutes on both sides. Chepa shutki can stick to the pan easily so you need to stir frequently. When done, transfer to a dish. 

Then add some oil to the same pan and fry the chopped onions for 2 minutes, or as long as they turn lightly golden. Keep aside. Next, roast the green chili and garlic for 2 minutes. 

Now, to prepare the bhorta, mix everything and use a blender or a sheel pata. Serve with white rice.

Steamed Loitta Shutki Curry

Ingredients

12-15 pcs Loitta Shutki, 1 cup onion (chopped), 1 tsp garlic paste, ½ tsp ginger paste, 1 tbsp green chili paste, one tsp red chili powder, 1 tsp turmeric powder, ½ cup oil, ½ cup coriander leaves (chopped), salt (as required), and ½ cup water (for gravy).

Procedures:

First, cut the dried fish pieces into 1-2 inches long and soak them in warm water for 20-25  minutes. Stir the pieces in the warm water and then drain them and wash well. Take a bowl and mix everything with clean hands. Marinate the mixture for 30 minutes. After 30 minutes, place the marinade mixture into the steel box. Cover the box with the lid and steam for about half an hour over medium flame. After 30-40 minutes, your steamed dried fish curry is ready. Enjoy with hot plain rice.

Fried Jackfruit with Chhuri Shutki

Ingredients

4 pcs of dried fish (Chhuri Shutki), 2 cups of jackfruit (boiled), ½ cup onion (chopped), 1 tsp garlic paste, one tsp ginger juice, 4 pcs dried red chili, 1 tsp red chili powder, ½ tsp turmeric powder, 1 cup water, ½ cup oil, and salt (as required).

Procedures:

First, cut the fish into ½-inch pieces. Then soak the pieces in warm water for 20-25 minutes. Next, drain and clean the fish. Now put the clean dried fish into a bowl and then add the red chili, turmeric powder, and salt also. Combine everything. 

Take a pan and heat the oil. Fry red chilies and dry fish mixture for 2-3 minutes or as long as the pieces become golden brown. Transfer fish to a dish and set aside.

Heat the remaining oil in the pan and add the chopped onion and fry for some time. Add garlic paste and ginger juice and cook for 1-2 minutes. Add jackfruit and fried dry fish and mix well. Add 3-4 tbsp water and stir continuously as long as everything is cooked through. Transfer to a serving dish when the water dries out and the oil separates.

Dried Prawn Scrambled Eggs 

Ingredients:

4 eggs, 30 pcs of dried prawn, ¼ cup onion (chopped), 2-3 green chilies (chopped), ¼ cup oil, salt (as required), ¼ teaspoon turmeric powder,  and ½ cup coriander leaves (chopped).

Procedures:

First, clean and wash the dried prawn. Then heat oil in a pan. Add dried prawns with salt and turmeric powder. Fry as long as the prawns are cooked through and crispy. Ingredients:

1 kg of dried Rupchanda fish, ½ tbsp cumin powder, ½ tbsp coriander powder, 1 tbsp chili powder, 1 tbsp turmeric powder, garam masala, salt, sugar (as required), ½ cup onions (chopped), 3-4 tbsp garlic (minced), 1 cup tomatoes (chopped), 5-7 green chilies, 2 tbsp coriander leaves (chopped), ½ capsicum (chopped-optional), and water (as needed).

Procedures:

First, cut the dried fish into pieces. Then heat oil in a pan and fry the fish pieces and set aside. Add the minced garlic to the pan and fry for a few seconds. Add onions and fry until lightly golden. Add little water, salt, and all spices. Cook for a while for about 2-3 minutes. Add the fried fish, and cook for some time.

Next, add chopped tomatoes and capsicum and cook for 5 minutes or until tomatoes and capsicum become soft and tender and oil comes out. Sprinkle sugar and give a nice stir.
